Ingredients
Bar Ingredients
  • 1 1/2 cups flour
  • 2/3 cup brown sugar firmly packed
  • 1/2 cup butter
  • 2 egg yolks
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 cups miniature marshmallows
Topping Ingredients
  • 1 (10 ounce) package peanut butter chips
  • 2/3 cup corn syrup
  • 1/4 cup butter
  • 2 tsp vanilla
  • 2 cups rice cereal
  • 2 cups salted peanuts
Servings:
Instructions
  1. Preheat oven to 350 degrees
  2. Combine all of the bar ingredients except the marshmallows in large mixing bowl; mix until crumbly. Press the mixture firmly into the bottom of 13x9 2-inch baking pan
  3. Bake in a 350 degree oven for 12-15 minutes or until golden brown. Remove from the oven and immediately sprinkle 3 cups mini-marshmallows over the surface
  4. Return to oven just until the marshmallows begin to puff (1-2 min)
  5. Remove from the oven; cool while preparing the topping
Topping
  1. In a large saucepan, stir together the first 4 topping ingredients, cook over low heat stirring constantly, until the chips are melted and mixture is smooth
  2. Remove from the heat; stir in the rice cereal and peanuts
  3. Immediately spread the mixture over the marshmallows
  4. Cover and refrigerate until firm (2 hrs) Cut into bars and enjoy!
