Ingredients
  • 18 oz pkg cream cheese
  • 2Tbsp Dijon mustard
  • 3 green onionsfinely chopped
  • 1/4cup shredded zucchini
  • 1/4cup shredded carrots
  • 68-inch tortillas
  • 12-18 large spinach leaves
  • 112 oz bottle roasted red peppers
  • 3/4lb deli turkeythinly sliced
Instructions
  1. Mix cream cheese with the mustard until combined.
  2. Add green onions, zucchini, carrots and peppers; mix well.
  3. Spread the mixture over the entire tortilla within a little of the edge.
  4. Top with the turkey, cover with spinach leaves.
  5. Roll up tightly.
  6. Refrigerate.
  7. Cut either in half or into 1 inch slices.
  8. Serve, enjoy!
