Ingredients
Pasta
- 1 cup onions finely chopped
- 1 red pepper diced
- 1 yellow pepper diced
- 1 green pepper diced
- 2 Tbsp olive oil
- 2 Tbsp butter
- salt and pepper
- 3/4 cup heavy cream
- 3/4 cup gemeli
Topping
- 1/2 cup Parmesan
- 2 Tbsp parsley chopped

Instructions
- In a large heavy saucepan, heat oil and butter.
- Add chopped onions and cook over low heat, until very tender and golden.
- Add the peppers and cook until tender, again using low heat.
- Season with salt and pepper to taste.
- Add the cream and cook over high heat until reduced by half .
- In the meantime, cook the pasta in plenty of boiling, salted water.
- Transfer to a heated bowl and sprinkle with Parmesan and parsley.
