Ingredients
Crust
  • 3cups flour
  • 1 1/2cups sugar
  • 1 1/2cups butter
Cream Cheese Filling
  • 16 oz cream cheese
  • 2 eggs
  • 4Tbsp sugar
  • 4Tbsp milk
  • 2tsp almond extract
  • 2tsp vanilla
  • 1 20 oz can crushed pineapple
Coconut Topping
  • 2Tbsp melted butter
  • 3-4cups sweetened coconutgrated
Instructions
Coconut Topping
  1. In a medium bowl mix together melted butter and coconut. Set aside.
Crust
  1. In a medium bowl, combine flour, sugar and butter. Mix until crumbs.
  2. Press into large cookie sheet (12x17x1) and poke holes in the crust with a fork.
  3. Bake at 350 degrees for 15-20 mins. Until lightly browned.
  4. While the crust is baking prepare the coconut topping and cream cheese filling.
Cream Cheese Filling
  1. Combine cream cheese, eggs, sugar, milk, almond extract and vanilla in a large bowl.
  2. Beat with an electric mixer until smooth.
  3. Add crushed pineapple and mix. Pour cream cheese mixture over crust.
  4. Sprinkle coconut topping over cream cheese filling.
  5. Bake at 350 degrees for 18-20 mins or until coconut has browned and middle is set.
  6. Chill for at least 1 hour before serving. Enjoy!
