Grandpa’s Favorite Rice Pudding

Ingredients
1
cup
long grain white rice
8 plus 2
cups
whole milk
1 plus 1/4
cup
sugar
4
eggs
2
tsp
vanilla
ground cinnamon to taste
Instructions
Wash and drain the rice.
Combine the rice, 8 cups of milk, and 1 cup of sugar in a large saucepan.
Cook over medium heat, stirring occasionally, until rice is tender, 25-40 mins.
In a mixing bowl, combine the eggs, 2 cups milk, 1/4 cup sugar and vanilla.
Beat well to blend ingredients thoroughly.
When the rice is tender, add the egg mixture and cook over medium heat until the liquid is just beginning to boil.
Remove from the heat and let cool.
Refrigerate until cold.
Serve topped with ground cinnamon.
