Cousins Chicken Enchilada

cooked and shredded or shredded rotisserie chicken

Instructions
Mix shredded chicken, chopped sauteed onion, parmesan cheese, with 1 cup Monterey Jack cheese.
Salt to taste, if needed. Set aside.
Take blender of food processor and combine green chilies, tomatoes, cilantro, whipping cream and egg.
Blend until smooth, taste and adjust seasonings, salt and pepper.
Preheat the oven to 350 degrees.
Warm tortillas to soften or use the uncooked tortillas and cook as package indicates.
In your baking dish pour a little sauce in the bottom and then place rolled tight tortillas seam down in the dish.
Pour the remaining sauce over the tortillas when they are all rolled.
Bake 20 mins or until heated thru and bubbly. Serve hot with sour cream, guacamole, lettuce, olives and tomatoes.
