Bowtie Pasta with Basil Cream

Ingredients

olive oil

chopped onions

lean pancetta
chopped

sun dried tomatoes in oil
julienned

heavy cream

bowtie pasta

chopped basil leaves

Parmesan cheese

toasted pine nuts
Instructions
In a large saucepan, heat the oil. Add onions and pancetta, and cook until the onions are tender. Add sun-dried tomatoes and heat through. Set aside.
In a saucepan, bring the cream to a boil, reduce heat, and simmer for 5 minutes.
Cook the pasta in plenty of boiling salt water until al dente.
Stir the hot cream into the onion mixture and heat through. Fold in the basil.
Drain pasta and combine with sauce. Adjust seasoning and stir in Parmesan.
Pour into a warm serving dish and garnish with pine nuts.
