Bowtie Pasta with Basil Cream

Ingredients
  • 10Tbsp olive oil
  • 2cups chopped onions
  • 1/2lb lean pancettachopped
  • 4Tbsp sun dried tomatoes in oiljulienned
  • 2cups heavy cream
  • 12oz bowtie pasta
  • 4Tbsp chopped basil leaves
  • 1/3cup Parmesan cheese
  • 3/4cup toasted pine nuts
Instructions
  1. In a large saucepan, heat the oil. Add onions and pancetta, and cook until the onions are tender. Add sun-dried tomatoes and heat through. Set aside.
  2. In a saucepan, bring the cream to a boil, reduce heat, and simmer for 5 minutes.
  3. Cook the pasta in plenty of boiling salt water until al dente.
  4. Stir the hot cream into the onion mixture and heat through. Fold in the basil.
  5. Drain pasta and combine with sauce. Adjust seasoning and stir in Parmesan.
  6. Pour into a warm serving dish and garnish with pine nuts.
