Use fresh ingredients for an added oomph!
Ingredients
- 10 Tbsp olive oil
- 2 cups chopped onions
- 1/2 lb lean pancetta chopped
- 4 Tbsp sun dried tomatoes in oil julienned
- 2 cups heavy cream
- 12 oz bowtie pasta
- 4 Tbsp chopped basil leaves
- 1/3 cup Parmesan cheese
- 3/4 cup toasted pine nuts

Instructions
- In a large saucepan, heat the oil. Add onions and pancetta, and cook until the onions are tender. Add sun-dried tomatoes and heat through. Set aside.
- In a saucepan, bring the cream to a boil, reduce heat, and simmer for 5 minutes.
- Cook the pasta in plenty of boiling salt water until al dente.
- Stir the hot cream into the onion mixture and heat through. Fold in the basil.
- Drain pasta and combine with sauce. Adjust seasoning and stir in Parmesan.
- Pour into a warm serving dish and garnish with pine nuts.
