Ingredients
- 1 cup long grain white rice
- 8 plus 2 cups whole milk
- 1 plus 1/4 cup sugar
- 4 eggs
- 2 tsp vanilla
- ground cinnamon to taste

Instructions
- Wash and drain the rice.
- Combine the rice, 8 cups of milk, and 1 cup of sugar in a large saucepan.
- Cook over medium heat, stirring occasionally, until rice is tender, 25-40 mins.
- In a mixing bowl, combine the eggs, 2 cups milk, 1/4 cup sugar and vanilla.
- Beat well to blend ingredients thoroughly.
- When the rice is tender, add the egg mixture and cook over medium heat until the liquid is just beginning to boil.
- Remove from the heat and let cool.
- Refrigerate until cold.
- Serve topped with ground cinnamon.
