Ingredients
- 2 3/4 cups heavy cream divided
- 1/4 cup whole milk
- 1/2 cup sugar
- 1/2 cup semisweet chocolate chips
- 1/2 cup milk chocolate chips
- 1 large egg
- 2 tsp vanilla
- 4 cups croissants cubed

Instructions
- Preheat the oven to 325 degrees.
- In a medium saucepan, heat 1 3/4 cups cream, the milk, and 1/2 cup sugar until the sugar is dissolved; do not allow to boil. Remove from the heat.
- Add the chocolate and whisk until melted.
- In a large bowl, whisk together the egg and 1 tsp of the vanilla.
- Gradually whisk in the chocolate mixture until well blended.
- Add the croissant cubes and stir gently until coated. Transfer the mixture to a 6-cup baking dish and sprinkle the top with 1 Tbsp sugar.
- Bake for 45 minutes, or until the center of the pudding is gently set. Do not over-bake.
- While the pudding is baking, whip the remaining 1 cup cream with 2 Tbsp sugar and 1 tsp vanilla.
- Serve the pudding warm with the whipped cream.
